(I'm currently on a quest to read/watch every pirate title in my local library, figured I'd share my findings with the fandom.)
I had to read the book Captain Blood by Raphael Sabatini in high school and loved it. It's actually what I credit as starting my pirate obsession. It was later made into a movie and not only launched Errol Flynn's career, but is also regarded as one of the defining works in swashbuckler/pirate genre.
Basically, it's about an (Irish) doctor, Peter Blood, unfairly accused of treason and sent away as a slave to Jamaica. A young, politically connected woman takes pity on him and buys him to protect him from a cruel slave master. They develop this sort of love-hate relationship, clearly attracted to each other, but too proud to admit it (and there's the whole master/slave thing that doesn't sit well with either of them). Things happen, bad guys show up, our poor doctor is screwed over again by the government, and he basically decides "screw it, piracy is better than slavery" and steals a ship to escape. More things happen, but all we REALLY care about is how he keeps pining for the woman he left behind, and how she's scared the authorities will one day catch and kill him. (Don't worry, the ending is classic Hollywood cuteness.)
Honestly, I love this movie because it's basically its own AU. Blood is a military man turned doctor turned slave turned pirate. That's, like, half the AU's ever written, right?
And, you know, Errol Flynn.
